Barbera Sausage and Potato Casserole
Everyone loves a sausage casserole and this recipe, made with the rich flavours of Barbera wine, is special enough to serve at a supper party. Better still, it’s the perfect all in one dish!

Ingredients

Ingredients: 

  • 2 tsp. olive oil
  • 8 sausages
  • 1 large onion, sliced
  • 1 tbsp. plain flour
  • 1 jar Sacla’ Barbera Sauce with Rich Barbera Red Wine
  • 2 carrots, sliced
  • 2 celery sticks, sliced
  • 4 medium-large floury potatoes, cut into bite-size pieces
  • ½ pointed cabbage, shredded
  • 2 thyme sprigs, leaves picked

How to make the recipe

Method: 

  1. Fry sausages in oil in a pan for about 8 minutes until browned all over.
  2. Add the onion with a pinch of salt and cook for another 5 minutes until softening. Stir in the flour and cook for 1 minute. Add Barbera Sauce and 500ml water and bring to a simmer. Stir in carrots, celery and potatoes and return to a simmer. 
  3. Cover with a lid and reduce to a low-medium heat. Bubble gently for 30 minutes, stirring every now and then. Stir in the cabbage and cook for another 15 minutes or until everything is tender. Season and scatter with thyme leaves.
