Chicken Parmigiana

Chicken Parmigiana
Crispy breaded chicken, bubbling Mozzarella and the full flavours of olive and tomato in the Cacciatora Sauce – this is a date night dish guaranteed to impress. It just needs a salad!

Ingredients

Ingredients: 

  • 2 chicken breasts
  • 30g plain flour
  • 2 medium eggs
  • 50g panko breadcrumbs
  • Vegetable oil to shallow fry
  • ½ jar Sacla’ Cacciatora Sauce with Tomato, Olive and Herbs
  • 50g Mozzarella, grated
  • 10g Parmesan, grated
  • 1 tbsp. chopped parsley

How to make the recipe

Method: 

  1. Bash chicken breasts between baking paper sheets until they’re evenly thick.
  2. Flour the chicken, dip in egg and then dredge in breadcrumbs so all the meat is coated.
  3. Fry the chicken breasts in oil on a medium-high heat for 4-5 mins each side until golden then place in an oven proof dish.
  4. Put a big spoonful of Cacciatore Sauce on each breast then sprinkle with Parmesan and Mozzarella. Bake in the oven for 10 mins until the cheese is melted and bubbling. Season and scatter with parsley.
