Roast Chicken Cacciatora
Pollo alla Cacciatora is a true classic of Italian countryside cooking. Here’s a take on this famous Hunter’s Chicken for a truly delicious roast chicken Sunday lunch.

Ingredients

Ingredients: 

  • 5kg chicken
  • 2 tbsp. olive oil
  • ½ lemon
  • 10g parsley, stalks and leaves separated
  • 2 red onions, cut into wedges
  • 2 red peppers, cut into 4cm chunks
  • 1 jar Sacla’ Cacciatora Sauce with Tomato, Olive and Herbs
  • 20g pitted green olives, sliced

How to make the recipe

Step 1

Heat the oven to 200°C/180°C fan. Rub the chicken with half the oil. Season and put lemon and parsley stalks in the cavity.

Step 2

Place the chicken in a roasting tin and add onions and peppers. Drizzle the veg with the more oil and season with a pinch of salt. Roast for 45 mins. 

Step 3

Now pour the Cacciatora Sauce around the chicken and stir. Cook for another 30-40 mins until everything is cooked.

Step 4

Serve scattered with olives and parsley leaves.
