Roasted Salmon Noodles with a Basil Pesto & Lime Dressing
Italy meets Asia in this fabulous fusion recipe. Fresh lime adds zing to our fragrant Sacla' Reduced Fat Basil Pesto and really makes the flavours sing. We love it with thick udon noodles, but it works with any kind.

- 2 salmon fillets
- 100g green beans, topped and tailed
- 1 tbsp olive oil
- 1 packet of straight to wok large udon noodles
- 1 lime, 1/2 peeled and roughly chopped, 1/2 juiced
- 1 tbsp Sacla’ Reduced Fat Basil Pesto
- a handful of basil leaves
- 1 spring onion, finely sliced (optional)
