How to make the recipe

Step 1

Spoon the Char-Grilled Aubergine Pesto into a bowl

Step 2

Slice each chicken breast into 3 strips and add them to the Pesto

Step 3

Stir to cover and leave to marinate in the fridge for at least an hour

Step 4

Soak 12 wooden skewers in water (to stop them burning)

Step 5

Remove the chicken from fridge and thread onto skewers

Step 6

Finish each skewer with a lime wedge

Step 7

Next heat a griddle or frying pan until it's hot and add the chicken skewers. Cook for 3-5 minutes on each side, until browned and cooked through
