Bring on the crunch with this chicken recipe, baked in the oven for a crisp, herby crust. Topped with breadcrumbs, Sacla' Classic Basil Pesto and Parmesan, they're packed with flavour. Add pine kernels for even more texture.

Ingredients

  • 1 tbsp. olive oil
  • 4 chicken breasts
  • 100g fresh breadcrumbs
  • 45g Parmesan, grated
  • 45g pine nuts
  • 3 tbsp fresh parsley, chopped
  • Salt & black pepper to taste
  • 5 tbsp. Sacla’ Classic Basil Pesto

How to make the recipe

Step 1

Preheat the oven to 200°C/400°F/Gas mark Lightly grease a baking tray with a little oil

Step 2

Slice each chicken breast in half horizontally to make 8 thin fillets

Step 3

In a small bowl mix together the breadcrumbs, Parmesan, pine nuts and parsley

Step 4

Season with salt and pepper

Step 5

Spread the Sacla’ Pesto all over the chicken breasts, then cover generously with the cheesy crumb mixture

Step 6

Drizzle with a little oil and cook for 15 - 20 minutes, until the crumbs are golden and the chicken cooked through
