Italians have a wealth of recipes at their disposal, sometimes passed down through generations and always especially delicious. This slow-cooked sauce, made with plenty of Barbera red wine, is the star of the show in braised meat dishes. We love it with beef, cooked for a long time until it falls apart and when speed is of the essence, it’s great with meatballs, sausages and steak. And the Italians, of course, love it with game, and wild boar in particular.
Whatever you choose, simply sear the meat, simmer in the sauce (on the hob, oven, slow cooker or air fryer) and serve with buttery mash, polenta and bright green vegetables.
